WThis is an easy interpretation of a beverage from our latest menu. It's a party-sized pre-mixed that is bursting full of flavours of a Christmas time, rendering it excellent for hosting a festive gathering. Any leftover citrus syrup to use in brunch beverages, sweets, or for another batch of this cocktail.

Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Drink (makes 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Citrus Syrup: Put the listed items in a pot, heat until it reaches a gentle boil, stirring to dissolve. Next, remove from the heat and leave to reach room temperature entirely. Decant into an clean bottle, cap it and refrigerate it chilled, it will last for up to a month.
Preparing the Batch Mix: Mix every liquids into a sizeable container, allow it to infuse for one hour, then strain , ideally through a fine cloth, to ensure it's fully clarified.
To serve: Pour 85ml of the cocktail base to a mixing glass filled with ice, and agitate lightly for a minute to chill. Strain to a chilled martini glass or similar, garnish with a few cranberries and complete it by giving it a brief mist of the essential oil above the glass.
